Potatoes are perhaps one of the most popular foods in Western culture. We have fried, boiled, mashed, curly, you name it! But few have tasted the real beauty of a homegrown, garden-fresh potato. Huckleberry Golds are a bright, purple-skinned potato with yellow flesh. They are very smooth and attractive, with a rich flavour. Best of all, they have the lowest glycemic index out of any potato, meaning anyone who’s watching their carbohydrate intake can still eat these!
Potatoes are rather easy to grow. They are tolerant of cool soils, however they should be planted once the soil is 6 degrees Celsius in temperature- shortly after the last frost of the season, once the ground is thawed. They enjoy full sun exposure. Ideally, they enjoy well-draining, loamy soil that is rich in organic matter such as compost or manure. When the above-ground potato sprout is about 30cm tall, hill about 15cm of soil around the plant- covering green leaves.
They can also be grown in bags, large containers, and even burlap sacks, for the urban gardener. Start off with a layer of soil about 5-10 cm deep, just enough to cover the tops of the potatoes when planted. Allow the plants to sprout, and keep hilling up dirt around the greens as they come up. Once you’re at the top of your container or bag, allow the plants to flower and die, and dump out the contents to go hunting for potatoes!
